Sardina Pilchardus (Sometimes called "Pilchards") We catch the sardines in the English Channel during November - February. In November the fat in the fish is very high around 14% and this falls to 5% in February. The size of the sardine we catch is 8-12 pcs/kg. The fish can either be frozen whole of Headded and gutted. |
